It looks like I’m back on line so I’ll briefly mention a tour we gave last week to a Pulque Plantation where we saw how cactus juice was extracted from Agave Plants

Afterwards we went on a hayride around the bullfight ranch.

Zulema… “cactus juice” or to be exact, the sap extracted from the manso maguey plant and fermented is better known as “Pulque” can be found at many towns and villages in Mexico but moreso in Hidalgo & Tlaxcala where there are large plantations on Magueyes. The Town of Tlaxco, Tlaxcala is one of the top producers of the region.
